milling

The process through which wheat grains (or other cereals) are transformed into flour. It uses mechanical forces such as grinding, crushing or cutting to break grain kernels into very small pieces, effectively pulverizing them.

The pulverized material created from wheat grains is separated through some processes such as sieving and then further ground or crushed to become thinner. This finally results in the white wheat flour that is widely commercially available.

The wheat kernel is mainly composed of three parts. Namely, the bran, germ and endosperm. White flour is composed mostly of the latter; while whole grain flour has all three part in approximately the following proportions: 83% endosperm, 14% bran and 3% germ.
